Ingredients

  • 2 cups flour
  • 10 tablespoons granulated sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1 1/4 cup coarsely chopped toasted walnuts (about 1 cup)
  • Half a heaping cup of grated dark chocolate
  • 3 very ripe, smooth, darkly speckled bananas
  • 1/4 cup plain yogurt
  • 2 large eggs, lightly beaten
  • 6 tablespoons unsalted butter, melted and cold
  • 1 teaspoon vanilla extract

preparation:

Prepare the dough

  1. Set the oven rack to the medium setting and heat it to 200 degrees.
  2. Bake the bananas on a rimmed baking sheet until the skin is completely black, about 20 minutes, turning the bananas occasionally during cooking.
  3. Peel and mash the bananas until smooth.
  4. Measure out 1-1 / 2 cups of mashed bananas and discard any excess.
  5. Smear the mold with flour or butter.
  6. Combine first five dry ingredients and chocolate in large bowl; put aside.
  7. Combine the mashed banana, yogurt, eggs, butter, and vanilla with a wooden spoon in a medium bowl.
  8. Lightly pour the banana mixture into the dry ingredients with a rubber spatula until just a smooth mixture.

Baking and enjoying chocolate banana bread

Put the mixture in a prepared loaf pan. Bake until the bread is golden brown, about 55 minutes. Insert a toothpick in the center until it comes out clean.

Let cool in pan for 5 minutes, then transfer to wire rack. Serve hot or at room temperature.
