How to make a vegan lasagna

Indeed, there are many ways to prepare an exquisite lasagna, and not just the traditional Bolognese. It is a truly versatile dish and, in this sense , we can perfectly prepare a vegan lasagna: only with vegetables, with vegan cheese, with vegan béchamel and with vegetable butter.

1. Vegetable lasagna with vegan béchamel

The first alternative to enjoy a vegan lasagna involves preparing a béchamel with ingredients of plant origin. Still not try it? Follow the instructions and enjoy it with your whole family.

Ingredients for lasagna

  • Lasagna plates
  • Vegan grated cheese

For the filling

  • Mushrooms (300 g)
  • 1 aubergine
  • 1 zucchini
  • 2 onions
  • 1 small – medium red bell pepper
  • 2 cloves of garlic
  • Olive oil
  • Pepper
  • Salt

For the vegan béchamel:

  • 4 cups of unsweetened non-dairy milk (1 liter)
  • 5 tablespoons of flour
  • 1 large tablespoon of vegetable butter
  • Nutmeg
  • Salt

Preparation of the bechamel

  • First, we add all the ingredients in a pot. If you want, you can sift the flour beforehand to make sure less lumps will appear.
  • We then bring to a boil and stir constantly to ensure that the mixture is thick and homogeneous and without lumps.
  • Finally, we remove from the heat and reserve.

Of the filling

  • First, we wash and peel all the vegetables well. Also, we cut them into small pieces.
  • Next, add a splash of olive oil to a frying pan and sauté all the vegetables adding pepper and salt to taste. We fry everything until golden brown.

Of lasagna

  • Depending on the plates that we have bought, we must prepare them according to the instructions. Some require to be boiled, others to soak them, others can be put directly into the oven … Read the instructions on the package and prepare them.
  • Meanwhile, you can preheat the oven to 180 degrees.
  • When the plates are ready, in a baking tray we will place a layer of lasagna plates and then, on top, a layer of filling.
  • Then we will repeat the same operation: a layer of lasagna plates and a filling plate.
  • Thus, we will continue until we have no more plates left.
  • Then, we pour the bechamel on the last layer and, afterwards, vegan cheese on top.
  • Finally, we put the tray in the oven for about 15 minutes, until it turns golden brown.
  • Now you can enjoy a tasty vegan lasagna with vegetables and béchamel!

2. Vegetable lasagna

If it did not attract your attention with béchamel, you can try this alternative where you will only use vegetables. It is very delicious and you can enjoy it both for lunch and dinner.

Ingredients for lasagna

  • Lasagna plates
  • Grated vegan cheese

For the filling

  • Mushrooms (300 g)
  • 1 jar of tomato for stir-fry
  • Spinach (200 g)
  • Olive oil
  • 1 red bell pepper
  • An eggplant
  • 1 zucchini
  • 1 onion
  • 2 cloves of garlic
  • Salt and pepper to taste

Preparation

  • First, we wash and peel the garlic, onion and pepper.
  • Then, we cut them very thin and add them to the pan with olive oil. Lightly fry and then add the can of tomato and a pinch of salt. If you want, you can also add a pinch of sugar. We must prepare a sauce with these ingredients. We booked.
  • Afterwards, we wash the aubergine and zucchini. You don’t need to peel them. In any case, we must cut them into very thin slices.
  • On the other hand, we will also wash the spinach. If they are frozen, we must defrost them and drain them well so that they remove all the water.
  • In another pan, with olive oil and salt to taste, fry the zucchini, aubergine and spinach. We booked. 
  • Later, as in the previous case, we must prepare the lasagna plates according to the instructions on the package. Once ready, in a tray suitable for the oven, we will place a layer of plates.
  • Then, on this layer, add part of the spinach mixture and cover with a second layer of lasagna plates.
  • Repeat the operation to obtain at least 3 layers of lasagna and 3 layers of vegetable filling (zucchini, eggplant and spinach). 
  • Then, on the last layer of plates, pour the tomato sauce and add vegan cheese on top.
  • Finally, put the lasagna in the oven at 180 degrees for about 15 minutes, until golden brown.
  • Serve it hot and enjoy!
