Ingredients

  • Salt to taste.
  • 4 liters of water.
  • 1 chicken thigh (80 g).
  • 1 small chopped leek (40 g).
  • 1 finely chopped onion (30 g).
  • 2 diced potatoes (60 g).
  • 1 pepper finely chopped (30 g).
  • 1 large chicken breast (150 g).
  • 2 carrots cut into cubes (50 g).
  • 2 finely chopped celery sticks (30 g).
  • 2 tablespoons of chopped coriander (20 g).
  • 2 cups of thin and short noodles (200 g).

Preparation

  1. Soften the chicken breast and thigh, cooking them in salted water. Then remove them, keeping the broth obtained.
  2. When the chicken is cold, shred it and reserve.
  3. Strain the broth to remove any debris left over from cooking the chicken. Return it to the heat and add the onion, pepper, celery and leek. Leave for approximately 10 minutes.
  4. Once the cooking is finished, without turning off the heat, add the carrot, potatoes and shredded chicken.
  5. Cook the noodles in a little water aside, and once cooked add them to the soup. Another alternative is to incorporate them into the soup. In this way, the starch from the noodles will add a little thickness to the soup.
  6. Another option is to bathe the cooked noodles with the broth. This will result in a clear broth.
  7. Add the coriander, salt and turn off the heat immediately.
