Honey Cake

Honey is a natural nectar with high energy and caloric properties. Its contribution in sugars is even greater than that provided by sugar cane and it works as a natural preservative. For this reason, our honey cake will be preserved for longer than expected, just in case we don’t devour it on the first day.
Option 1: step by step of the honey cake
Ingredients
- 4 eggs
- 150 grams of honey
- 50 grams of brown sugar
- 100 grams of flour for pastry
- 125 grams of butter at room temperature
- 30 grams of chopped almonds
Preparation
- Beat the butter together with the sugar until it dissolves.
- Add the eggs to the preparation, one by one.
- Microwave the honey for a few seconds, until it is fluid. Let stand a little and add to the mixture.
- Now with a spoon, manually, add the 100 grams of pastry flour, which you have previously sifted.
- Mix all ingredients.
- Lastly, add the chopped almonds.
- You can also include a touch of ground cinnamon to your liking .
- Prepare a baking sheet, about 8 inches in diameter.
- Add the mixture to the tray.
- Bake in a preheated oven at 180º C for 45 minutes.
- Remove from the oven, let it rest for a few minutes and then serve with a good cup of coffee. Enjoy it!
Option 2: honey and orange sponge cake without eggs
Here we bring you another more compact and humid option of the honey cake, with a rich orange aroma and also healthier, since it does not contain eggs. Read how this delicious cake is made.
Ingredients
- 100 grams of honey
- 50 grams of brown sugar
- 150 grams of flour
- 75 milliliters of sunflower oil
- 1 teaspoon baking soda or yeast
- a pinch of salt
- 50 milliliters of orange juice
- Orange peel zest
- Vanilla essence or cinnamon powder to taste
Preparation
- Make the orange juice and pass it through a strainer. Store in a plastic container.
- Grate some orange peel to flavor.
- Sift the flour and mix with the baking soda or yeast.
- Put the oven at 180º C and let it preheat for a few minutes.
- In a bowl, add the oil along with the honey and sugar. Beat for 5 minutes at high temperature.
- Now, add the orange juice and then, little by little, the sifted flour.
- Finally, add the pinch of salt, the orange zest and the essence of vanilla or cinnamon powder.
- Pour into a baking dish (8 inches in diameter).
- Cook for 45 minutes.
- You can add nuts to this cake . You can also add 100 grams of cream cheese to the mixture.It is very good!
- A great idea is to prepare an orange, cinnamon and cointreau syrup to coat the cake and then add a few pieces of nuts.
