How To Make Whole Wheat Spelled Bread?
Nowadays, when we go to a bakery, it is very common to see a section especially dedicated to wholemeal spelled bread. The price of this is usually considerably high compared to the most common breads, so, although curiosity calls us, we tend not to try it.

Spelled
It is a type of wheat (a subspecies, to be specific), thus, it is a cereal. It has fewer calories than commonly used wheat, and instead is high in lysine.
Lysine is an amino acid that is difficult to find in other cereals and that, in general, complements good nutrition. It is estimated that for every 100 grams consumed, you get 15 grams of protein.

Learn how to prepare a delicious whole wheat spelled bread
Ingredients
- 1 pinch of salt
- 1 glass of warm water (200 ml)
- 3 cups of spelled flour (300 g)
- 1 sachet of fresh yeast (15 g)
- 1 tablespoon of extra virgin olive oil (15 ml)
Utensils
- 1 spoon
- 1 roller
- 2 special oven bowls (preferably glass and with lid)
Preparation
- We put the two cups of water in the microwave for a couple of minutes to warm it up a bit.
- In a bowl, pour the warm water and mix it with the yeast. We stir until it dissolves completely. Then we add the olive oil.
- Next, add the spelled flour to the liquid, little by little, and stirring constantly so that a dough begins to form. The idea is to knead until it is no longer sticky. At the end, we make a complete ball of dough.
- In addition, we grease the other glass bowl with just a light layer of olive oil and place the ball there. We cover the bowl with the lid and let it rest for about 15 or 20 minutes.
- We preheat the oven to 110 ºC.
- Once the 20 minutes have elapsed, we take the bowl with the dough inside the oven for about 40 minutes at a temperature of 230 ºC.
- At 40 minutes, we turn off the oven, remove the lid from the bowl and place it upside down on a rack to cool. In this way, we will ensure that the bread does not lose its volume.
- We leave it there until the bread falls on the rack by itself, since if we force it, we can make it break.
Alternative preparation
- We dissolve the yeast in the water. Next, we add the spelled flour along with 3 cups of bread flour (which is equivalent to 300 grams). Add the salt and leave a space in the middle of the container to pour the olive oil.
- We mix all the ingredients with the help of a spoon and proceed to knead with our hands. We must achieve a dough that is sufficiently elastic and easy to handle.
- Once we have the dough ready, we make a ball with it and let it rest in a container with a lid for about 45 minutes to double its volume. Once this time has elapsed, we can knead again and make the shape we want for the bread (round, oval, etc.).
- We preheat the oven to 200 ºC.
- Next, sprinkle a tray with a little flour and place the bread dough on top. We take the tray to the oven for about 35 or 40 minutes. We will know that the bread is well cooked if, when hitting the base, the sound it produces is hollow.
- Remove from the oven and let cool to room temperature.
