No-bake Cherry Cheesecake
Do you like cherry cheesecake but want to find an easy recipe without an oven?
Well, here are two simple recipes, one with cherries as a garnish and Philadelphia type cheese and the other with quark cheese and cherries inside.
In this way you can choose the one you like the most to enjoy its delicious flavor.
No-bake cherry cheesecake with Philadelphia type cheese
Ingredients
For the base
- 200 g of cookies (the ones you like the most)
- 50 g of creamy butter
- Zest of 1 lemon
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla flavoring (optional)
- 2 tablespoons cherry jam
For the cherries in syrup (garnish)
- 500 g cherries
- 250g sugar
- 250 ml of water
- Star anise to taste (optional)
- 1 tube of cinnamon
- 1 tablespoon cherry jam
For the filling
- 400 g of Philadelphia type cheese
- 100 g of cream
- 75g sugar
- 50 g cherries in syrup or homemade cherries in syrup
- 1 piece of lemon peel
- 7 g of gelatin
Utensils to make it
- 1 shredder or airtight plastic bag and a rolling pin
- Springform pan
- 1 small saucepan
- 1 hand mixer
- Mixing spatula
- 1 spoon
- 1 grater
- Film paper
Preparation
Preparation of cherries in syrup
- First wash the cherries and pit them.
- Then add the water with the sugar, the cinnamon, the star anise (optional) and the lemon peel.
- Next, simmer for 10-12 minutes.
- Add the cherries and let them boil for another 6-7 minutes.
- To finish, add the jam and let the sauce reduce a little more.
Preparation of the biscuit base
- Start by crushing the cookies until you have a breadcrumb texture.
- Mix the cookies with the butter, lemon zest, 2 tablespoons of jam, cinnamon and vanilla.
- Line a removable mold with the dough as a base.
- Cover with plastic wrap and put in the fridge.
Preparation of the filling
- Beat the sugar with the cheese.
- Add the semi-whipped cream and mix everything.
- Dissolve the gelatin in the cherry syrup and put it in a small saucepan over low heat until it disintegrates.
- When the gelatin is warm, add to the cream cheese.
- Pour your mixture into the mold.
- Put in the fridge until the cake is firm.
- Heat the cherries in syrup with about 5 g of gelatin until it is completely dissolved and integrated.
- When the cherries are warm, take your cake out of the fridge and garnish with the cherries and syrup forming a layer.
- Return to the fridge until the cherry topping is solidified.
No-Bake Cherry Cheesecake with Quark Cheese
Ingredients
For the base
- 250 g of biscuits
- 75 g of creamy butter
For the filling
- 500 g quark cheese
- 400 g of cherries fresh or in syrup
- 400 g of liquid cream
- 200 g icing sugar
- 7 g of gelatin
Utensils
- 1 bowl
- Blender
- Saucepan
- Strainer
Preparation
- First, put the quark cheese in a colander to drain all the liquid.
- Second, grind the cookies and mix it with the butter until it forms a paste.
- Continue to line a mold with the dough. It will be the cookie base of your cake.
- Beat the cheese with the icing sugar until you have a smooth cream.
- Add the lemon zest and mix with a spoon.
- Beat the cream and add to the cheese mixture.
- Then hydrate the gelatin in a little water.
- Put it in a saucepan and let it dissolve in a water bath. You can also put it in the microwave for about 20 seconds.
- Add the gelatin to the cream cheese.
- Also, put a good amount of cream cheese on the base of cookies, a layer of pitted cherries and another part of cream.
- Put in the refrigerator until the cream solidifies.
- Finish your cake with cherry jam. If you want it to be like a syrup, boil 300 g of jam with 7 g of gelatin and a little water.

If you want a low calorie cherry cheesecake you can use Philadelphia type “light” cheese , cookies without added sugar and instead of 0% calorie sweetener sugar.
Also, if you want a quicker topping for your cake, cover it with cherry jam heated with a little water for an easier sauce to spread.
This cherry cheesecake is great served with a scoop of vanilla ice cream and a little whipped cream.
