Pineapple Glazed Chicken
Chicken preparations allow us a great variety of options. These include sweets, such as pineapple glazed chicken. The pineapple gives it a refreshing tropical flavor, which contrasts very well with the other ingredients that make up this dish.
This recipe has some variations, among which are those that include, in addition to pineapple, jalapeƱos. However, this time we will teach you how to make the traditional recipe. In general, it is not a difficult dish, and it will serve as a delicious lunch or a nutritious dinner. The advantage it has is that it does not provide much caloric content and it is not heavy if the amount of mustard is controlled.
Ingredients
- 150 cc of pineapple juice
- 1 boneless chicken breast
- 10 grams of mustard
- 100 cc of white wine
- Salt and pepper
- 50 grams of butter
- Half a cup of chopped pineapple
- A handful of cherries
Preparation
For this preparation it is better that you use a deep plate or a refractory (source) that you will cover with plastic wrap. Once you have your dish ready, you can put the boneless chicken breast. Take the opportunity to season it with salt, pepper and mustard. Put the breast in the fridge for 10 minutes. Meanwhile, take the opportunity to melt the butter. Preheat the oven to 200 degrees.
Next, bathe the breast with the wine, pineapple juice and melted butter. Cover it with plastic wrap, take care that the juices do not come out and take it to the oven for approximately 30 minutes. A few minutes before the baking time is up, add half the chopped pineapples and a handful of cherries, cover with the plastic wrap and let it finish baking.
When ready, remove the chicken from the oven and let it cool a bit, then bathe it with the juice left over from cooking and take it to the table to consume. To serve it, you can take it to the table in the same refractory or cut the breast into parts and serve it in individual plates accompanied by its own broth.
In case you want to give it a stronger flavor, we recommend you marinate the chicken with a splash of tequila before putting it in the fridge to rest for 10 minutes.
Additional tips
- You can use the mustard of your choice, but we suggest using a low additive brand.
- If you want to melt the butter quickly, you can leave it in the microwave for a few seconds. If you don’t want to use the microwave, the best thing to do is melt it in a double boiler.
- Something you should keep in mind is that you can also accompany the pineapple juice with a splash of cherry syrup.
- You can replace the chicken with a piece of ham, you can even make a mixed dish, respecting the cooking times of each ingredient.
- You can also add a little chicken broth to this recipe, although it should be less than the amount of pineapple juice you use.
